Still detoxing/cleansing. Week 3 of 4! I'm having fun coming up with new, "clean" stuff that's on my "yes" food list. Lentils were a foreign food to this girl, but since they were on my "yes" list, I figured I'd give them a try! Plus, I needed a change from brown rice.
Chicken, Lentil and Vegetable Soup
8 boneless skinless pieces of chicken
1 large box chicken broth
1 1/2 cups carrots, chopped
1/2 cup chopped mushrooms (next time I'll skip the mushrooms)
2 yellow onions, chopped
1 can rinsed green beans
3/4 cup green onion, chopped
1/2 bag dry lentils
Any seasoning you like (I used some garlic salt, celery salt and black pepper)
Add chicken to a large Dutch oven and cover with water. Boil, covered until chicken is done, then chop up chicken. (Do not drain water.) To the pot, add back the chicken and all other ingredients (plus about 2-3 cups water), bring to boil. Boil for about 10 minutes, then simmer until vegetables and lentils are done.
