Yep, still detoxing. Another good one in the books tonight.
Makes 3-4 servings
1 lb super lean beef, cooked and drained
1 onion, sautéed in olive oil until it's properly fajita-cooked (not a word)
1 green pepper, also sautéed the same way
1 can organic pinto beans, rinsed and drained, then mashed in a bowl with a potato masher. Add in any spices you want (I added a couple sun-dried tomatoes and a few dashes of Tabasco sauce, a little salt and a dash of lime juice) then I heated them up in the hot skillet after my onions/peppers were done).
Layer beans, beef, onions/peppers, lettuce, salsa. I had green onions in the fridge and forgot until I was done eating.
*balls up fists and yells, "Curses, full vegetable drawer! I'm coming for you, green onions!"*
